I do not -believe- this is possible. Only one option can be selected for your website at any given time. So, if you switch to the Site Builder it will display what you have published so far. My only advice in this situation would be to create your first page with a message like "We are currently in the process of re-building this site to improve your experience. Until the changes are finalized, please visit our old site at [A Link To Your Replicated Site]." Perhaps someone else has more experience with this. And if you find a way to accomplish what you want, please let us know!
